How Lucky is a mom who's twelve year old cooks a dinner!

How lucky am I? or how proud am I right now? Looks like we have a chef on our hands! Chef Curtis and father David ( Carolina Smoke On Site BBQ ) Move on over! There is someone in the house! Tonight my son ( age 12 ) decided to make dinner for himself and mom ( Makaela is out of the country ) We had chicken enchiladas , rice, beans, salsa, coleslaw, and tortilla chips! A complete dinner all done by Branden!

I had the opportunity to read yet another book out of the bottomless box from the Dr. Pat Show! And it was perfect timing with all the work I have been doing with Chef Curtis Ross, talking about medicinal properties of food, organic, meats, grains, herbs, and spices.
If you are interested in understanding food labels and how our food is processed from the farm to the grocery store this book is very well done. I started reading it from front cover to back but then started to find myself moving to sections that I was more interested in reading.

The book dives into reading about
* buying organic and local produce
* Slaughterhouse Semantics: Beef, Pork and Lamp
*Egg Labels, Quality, freshness dates, packing codes
*Fish, mercury, facts about fish labels
*Dairy, milk and Cheese ( wow, lots to earn about that one !)
*Oil, olive oil (which was very interesting a must read!)
*Grains
* The "isle" of denial, Carbonated and Sweetened Beverages( uh oh! )
There was so much more!

One thing I have been thinking about for a long time are those plastic water bottles some of us purchase in the store. It's easy , especially if your child plays a lot of sports!
Kimberly in her book dives into the bottled water controversy and notes that there is only one voluntary labeling program that is an extra guarantee that the water bottler meets or exceeds, FDA standards for safety.
Also consider this most water bottles are made from polyethylene terephthalate (PET) which is derived from crude oil. Meeting the increase demand for plastic to make these water bottles requires more than 1.5 million barrels of oil yearly. ( The same amount of fuel for nearly 100,000 cars for the same time frame)
Not to mention these water bottles end up in landfills!
If you are on the go or your child is active in sports consider the above Sigg Water bottles!

As soon as we are done with the plastic bottles in the garage we are moving to Sigg!
This book is an excellent reference tool. In the back is a great index so you can look up items depending on your interest.

Yes, there are still more books and audio in the bottomless box I received back in January from the Dr. Pat Holistic Makeover and I'm still working my way through reading each and every one of them!
Last week I read the Secrets of the Millionaire Inside. I have heard Paul McCormick talk on the Dr. Pat Show but it was nice to be able to read his concept from the beginning to the end. This book does need to be read from front to back cover. No skipping around! You will not get it's full benefit by moving around.
What can I say about this book? Paul has some very good concepts and if you are thinking of going into business for yourself I strongly recommend this book. It may change your how you approach your business plan.
The book walks you through his seven step formula for becoming a millionaire.
Here are a couple of steps that Paul outlines within a chapter:
1. STOP loving money
2. FOCUS on your desire
3. TAKE action
For each step he has some very good stories to illustrate his point and help you to fully understand the message.
I finished this book last week and I am still thinking about the seven steps and challenging myself to
1. "plant more seeds"
2. "be more creative
3. "value your time over money"
4. Belief + Action = Miracles
What does that all mean? You'll have to read the book to find out!
The book does come with a CD so you are able to listen while doing your daily commute.

This book can not be fully covered in one paragraph there is entirely too much good material. Go out and get the book!

Thursday Evening with Chef Curtis- Salmon & Veg Stir Fry




Tonight was a quickly prepared dinner! What everyone desires on a weeknight.

We took the above veggies:


Red Bell Pepper

Leek

Bok Choy

Snap Peas

and did a stir fry


We wanted to have an accompaniment so we had a fillet of Salmon.


Try this:


Take one of your home made marinades

Heat pan

two Tbl of marinade in hot pan.

Add Salmon

Cover, and cook until done


Repeat steps in a different pan with the Veggies


You have dinner done in 25 minutes!

Healthy, delicious and beautiful to look at too!

Did you notice the moon this morning?

How may of you noticed the moon this morning?
Wow! It was really out there big and bright.
( This picture doesn't do it justice! )
My daughter called me up to her room this morning. "Quick mom! come quick! " We shot this picture out her bedroom window. I'm always asking my kids to notice a flower, the weather, and sunsets all the time!
Yeah! They are starting to notice on their own!
It's a great day!

The picture on the right is our meat, red cabbage and what looks like "rice" is cauliflower which we whirled up in the Cuisinart and added some cumin. It has the consistency of rice and tastes like rice! It was wonderful! For all of you who can not eat pasta try this tonight. Everyone in the family loved it!






An Evening with Chef Curtis-

This week in the kitchen is an education on meat, poultry and fish. Tuesday evening we started with meat and Chef Curtis had my son Branden get involved with the cooking. They both did a wonderful job and I'll be posting additional videos of the finished product.

Things to consider about meat:

1. The leaner the meat = more protein

2. Organic meat vs. GMO meat. How is your cow being fed, and what is it being fed. Things to consider.

3. Depending on your digestive system meat can take 3-6 months to run thru your digestive system. Wow!

4. You should only eat 3-4 oz of meat at a time. There go those 12 -24 oz. steaks on the menu!

For tonight's dish we had a very lean , organic piece of meat. To prepare for the pan Branden did the following:

1. score meat ( lets the marinade get into the meat )

2. add marinade ( remember those herb marinades we made and have in the fridge? take one an slather it on the meat )

3. add additional seasonings , herbs and sea salt

4. heat your oil in pan

5. add some crushed garlic to hot oil ( to infuse the garlic in oil )

6. add meat. ( cook five minutes on each side )

7. add onion and beef broth

8. put in oven to finish cooking and cook down.

In that big bottomless box , remember that big box of goodies at the beginning of my posts? Well there are even more books!

This week I read the book I Can Do It!
I strongly recommend this book for anyone. What an easy read. Louise has a very sharp way of writing very beautiful and is yet straight forward in getting her point across not to mention the book is very beautifully illustrated.

The book is all about affirmations.

An affirmation opens the door and is the starting point on a journey to change.
How many of you practice affirmations?

One key message I heard in the book that it's important to always say your affirmations in the present tense and without contractions.
I am vs. I'm.

Some wonderful examples from the book

I hate my body becomes I love and appreciate my body.

I never have enough money becomes Money flows into my life in an abundant way.

Remember "I have" and "I am ".
I am surrounded by love and all is well.
I am at ease speaking in front of others. I have confidence in myself.
The book addresses affirmations in
Love, Forgiveness, Prosperity, Creativity, Relationships/Romance, Job Success, Stress Free Living and Self Esteem.
Who doesn't need a book like this right now?

Sacred Space

Creating a Sacred Space at Home or in your Daytimer!

In past posts we have talked about setting aside a special place for you to go for some quiet time. To reflect, think, meditate or pray. In my space I have put together some pictures of family, special gifts my children have made and some rocks that I collected on special vacation with my mom and daughter in California. ( They make me smile)
I've also found a set of Miracle Cards by, Marianne Williamson ( show above ) . They are fifty beautiful cards that reflect the miracles in our everyday lives. For the personal empowerment card on the reverse side it says:
" You are powerful in whatever moment you choose to be. The choice to be used as an instrument of love, right here, right now, is a choice of personal empowerment.
As we glorify God, we are glorified."
As most of you know I am in and out of the car all day so I've purchased a clear pocket for my day timer and that is where I keep my cards to look at during the day when I am out and about calling on customers. It is a constant reminder and I've tucked away some special memento's too! A traveling sacred space.
