How Lucky is a mom who's twelve year old cooks a dinner!

How lucky am I? or how proud am I right now? Looks like we have a chef on our hands! Chef Curtis and father David ( Carolina Smoke On Site BBQ ) Move on over! There is someone in the house! Tonight my son ( age 12 ) decided to make dinner for himself and mom ( Makaela is out of the country ) We had chicken enchiladas , rice, beans, salsa, coleslaw, and tortilla chips! A complete dinner all done by Branden!

I had the opportunity to read yet another book out of the bottomless box from the Dr. Pat Show! And it was perfect timing with all the work I have been doing with Chef Curtis Ross, talking about medicinal properties of food, organic, meats, grains, herbs, and spices.
If you are interested in understanding food labels and how our food is processed from the farm to the grocery store this book is very well done. I started reading it from front cover to back but then started to find myself moving to sections that I was more interested in reading.

The book dives into reading about
* buying organic and local produce
* Slaughterhouse Semantics: Beef, Pork and Lamp
*Egg Labels, Quality, freshness dates, packing codes
*Fish, mercury, facts about fish labels
*Dairy, milk and Cheese ( wow, lots to earn about that one !)
*Oil, olive oil (which was very interesting a must read!)
*Grains
* The "isle" of denial, Carbonated and Sweetened Beverages( uh oh! )
There was so much more!

One thing I have been thinking about for a long time are those plastic water bottles some of us purchase in the store. It's easy , especially if your child plays a lot of sports!
Kimberly in her book dives into the bottled water controversy and notes that there is only one voluntary labeling program that is an extra guarantee that the water bottler meets or exceeds, FDA standards for safety.
Also consider this most water bottles are made from polyethylene terephthalate (PET) which is derived from crude oil. Meeting the increase demand for plastic to make these water bottles requires more than 1.5 million barrels of oil yearly. ( The same amount of fuel for nearly 100,000 cars for the same time frame)
Not to mention these water bottles end up in landfills!

This book is an excellent reference tool. In the back is a great index so you can look up items depending on your interest.
